Haricot beans are small, oval, plump and creamy-white with a mild flavour and smooth, buttery texture. In the US, they are known as navy beans and are the classic ingredient in Boston baked beans. Haricot beans are widely used in the cooking of countries such as France, Spain, Portugal and South America.

Soak overnight in clean cold water. Drain and replace water to cover beans by 5cm. Fast boil for 10 mins. Reduce the heat and simmer for about 45 mins or until tender. Drain and save cooking water as this can be used in recipes requiring liquid.
You can also freeze the beans at this point in some of their cooking liquid.
