Sindhi Biryani masala is a spice blend for rice cooked with meat.

Recipe: Cube 500g of chicken or meat of your choice. Create a marinade using yogurt, ginger & garlic paste, salt and lemon juice. Coat the meat in the marinade then allow to sit for 30mins to an hour. Soak 500g basmati rice in twice the volume of water for 20mins. In 150g cooking oil fry 100g finely chopped onions with 200g peeled and cut potatoes (small pieces) and 10 finely sliced and cut small green chillies. Fry until the onions turn brown and the potatoes look cooked. Add 200g chopped tomatoes, 50g Heera Sindhi Biryani Masala and 50ml water then stir. Cook until the tomatoes soften then add the marinated cubed meat and 600ml water. Cook until the meat becomes tender. Boil the soaked rice until only quarter of the water remains. Transfer the rice and the cooked meat to a large cook and serve pan – layer the rice and the meat (one layer rice followed by one layer meat followed by 1 layer rice, etc). Add the remaining water from the boiled rice and continue cooking until all water evaporates. Serve with yogurf or raita.
