The first time you taste longkou noodles you notice above all the consistency. They are slippery and very light in the mouth. Also called cellophane noodles, longkou seem more like a garnish than a protagonist in the dish. What it lacks in robustness, it makes up for in its ability to absorb flavors. In 2 minutes, the longkou noodles absorb the flavors of the soups or sauces in which they are cooked. They also have another side. When fried they become crunchy, tasty nests to serve with rich sauces or to sprinkle on soups.
